- 2 fresh zucchini
- 1/2 cup olive oil
- 1/4 teaspoon salt
- 1 cup all-purpose flour
Slice the zucchini with a mandolin, so that they are thin. Place the slices in a bowl with warm water and allow to sit for 1 hour. Drain and dry the zucchini with a paper towel.
Preheat oven to 400°. Place the flour in a bowl and dredge the slices in the flour and line on a parchment paper lined baking sheet. Drizzle the oil over the top of the zucchini.
Bake, until the zucchini chips are dry and slightly golden. Remove from oven and salt. allow to cool and enjoy!
