So I have taken some of my classics and given them a new twist, reducing the amount of flour, salt and time to make some my dishes. this recipe is easy and can be prepared in less them 30 minutes.

  • 3 chicken breasts – cubed
  • 1 onion, pureed
  • 3 garlic cloves, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon all-purpose flour
  • 2 pounds of white mushrooms
  • 2 cups Marsala wine
  • 1/2 cup of beef stock
  • 2 teaspoons of salted butter, cubed
  • Pinch of salt
  • 1/4 cup freshly chopped parsley
  • Pinch of black pepper

Puree the onions, flour and olive oil together and place in a large skillet pan over medium heat. Add the chicken, garlic and mushrooms, salt and black pepper and saute for 5-7 minutes. Add the wine, stock, butter and parsley and mix throughly. Cover and allow to cook for 20-25 minutes. Mix occasionally. Add more stock if dry. Serve with some white rice and simple string beans and garlic.
