Honey Balls



  • 4 eggs
  • 1⁄4 cup salted butter
  • 1⁄2 cup sugar
  • 3 cups all-purpose our
  • 1⁄2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 tablespoon lemon zest
  • 2 cups oil
  • 11⁄2 cups honey
  • 3 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 3⁄4 cup slivered almonds, optional
  • 2 ounces silver ball or colored candy sprinkles


In a small mixing bowl beat the eggs. Melt the butter over low heat. Place the our in a large mixing bowl. Add sugar, baking powder, lemon zest and salt. With your hands press the mixture to the edges of the bowl leaving a well in the middle. Pour the eggs and the melted butter into the our mixture. Mix with a wooden spoon and then with the hands until dough leaves the sides of the bowl. Add remaining 1⁄2 cup of our as needed. Knead dough on oured surface until it is no longer sticky.

Break o pieces of dough and roll into ropes about the size of a pencil. Cut into pieces 1⁄4 inch long. Roll these pieces into little balls and set aside. In deep frying pan, add oil about 2 inches deep and heat. Fry balls until golden brown. Drain the balls on paper towels. In a large saucepan over medium heat, bring 11⁄2 cups of honey to a boil. Let honey boil gently for about 3 minutes before adding little dough balls; stir gently with wooden spoon until they are well- coated.

Remove balls from honey with a slotted spoon and place in a deep dish or mound them on a platter. Sprinkle surface evenly with nuts (optional) and sprinkles.
